#nomnom Bangin' Turkey-Veg Skillet Meal: packed with protein, not calories! You're welcome.

Helloooooo rowdy peeps! It has been halfway to forever since I had the chance to post. Ya know, life and all that fun, crazy, unexpected stuff. But, the temps are dropping, the snow is coming (much as I despise it) and the cooking bug is baaaaack! I'm so psyched to be back, sharing some new, awesomely savory, surprisingly healthy recipes, fun crafty ideas and much more. So let's dive in with this amazeballs recipe I made the other night: the oh-so-simple, totally scrumdiddlyumptious Bangin Turkey-Veg Skillet Meal!

My mama had given me the recipe for a super easy, super delish skillet meal from Del Monte a while back, and I decided to pick that sucker apart and make it my own. The original recipe called for ditalini pasta, but I wanted to cut out the carbs, so I subbed cauliflower florets. I also wanted to create a little bit of sauce, so I added a splash of Buttermilk Ranch dressing and a bit of chicken broth before simmering. The results, a saucy, delicious meal packed with flavor instead of carbs and calories. Want to ad your own twist? Make it spicy, add different veggies or boil up some rice to go with it. Anything goes with this amazingly easy meal!

Banging Turkey-Veg Skillet


1lb ground turkey, chicken or lean beef
1 bag frozen cauliflower florets
1 can cut green beans, drained
1 can diced Basil, Oregano & Garlic tomatoes
3/4 cup chicken broth
1 tsp minced garlic
1 tbsp onion powder or 1 small, finely diced white onion
Salt & pepper, to taste
1/4 cup shredded mozzarella or italian blend cheese
Squirt of Buttermilk Ranch dressing or other sauce/spice (optional)

Boil/steam cauliflower until tender. While cauliflower is boiling, brown the ground meat with the onion/onion powder, minced garlic salt and pepper. Drain. Add drained green beans, tomatoes and 3/4 cup of chicken broth. Stir well, cover and simmer on low heat for 6-7 minutes. Once cauliflower is done, drain, stir in with meat and veggies in skillet, cover and simmer for 3-4 minutes until all veggies are tender. Remove from heat and serve immediately sprinkled lightly with shredded mozzarella or italian blend cheese.

Chocolate Lovers, meet Triple Chocolate Brownies. You're Welcome.

Triple. Chocolate. Brownies. Yes, they are sinfully amazing. And yes, you will look like an absolute goddess of all things chocolate when you arrive at your next event with a pan of these babies (and all from a simple box of brownie mix and some strategically placed semi-sweet chocolate chips). With semi-sweet morsels in the batter and a layer of melted chocolate on top, these brownies will cure your craving for chocolate in a instant...and have you begging for more! Have half an hour? Then you have just enough time to create a rich, delectable pan of chocolaty goodness that is guaranteed to impress even the most devoted chocolate lover!

Triple Chocolate Brownies
(aka the most amazingly rich, chewylicious brownies you'll ever put in your face!)



What You'll Need:

1 box of Betty Crocker Fudge Brownie Mix
2 eggs
1 bag of semi-sweet morsels
2/3 cup vegetable oil
1/4 cup water


What To Do:

1. Preheat your oven to 350* and spray the bottom only of a 13 x 9 pan. 

2. In a large bowl, stir together brownie mix, eggs, water and oil until well mixed. Add in half of the bag of semi-sweet morsels and stir well. 

3. Pour brownie batter into the greased pan and cook for approximately 22-24 minutes (the box suggests cooking for 24-26 minutes, but I like my brownies chewy-gooey in the middle, so I usually take 'em out a few minutes early.)

4. About 1 minute before brownies are fully cooked, remove the pan from the oven and pour the rest of the bag of semi-sweet morsels evenly across the top of the brownies. Put the pan back in the oven for 1-2 minutes, or until the morsels begin to visibly melt. 

5. Remove the brownies from the oven and use a large spoon to smooth the melted chocolate chips into a "frosting" on top of the brownies. 

Serve warm with ice cream or a scoop of peanut butter on the top for a perfect winter treat and store the rest (if there are any) in an airtight container for up to a week (or even freeze some for later!!)

The Busy Morning Breakfast Solution: Homemade Wake-Up Wraps!

Confession: I am sooooooo not a morning person. Like, at all. But, one thing that I've always enjoyed doing is getting up to see my hubby off to work with a goodbye kiss and a cooler packed with crazy-good chow for the day. After trying scrambled eggs, hard-boiled eggs, muffins and banana bread, I decided to take a tip from Dunkin Donuts and try making my very own wake-up wraps at home. My hubby is a total routine man, and he loves how easy it is to customize different flavors and combinations of wraps and how simple it is to heat up once he gets to work! I, on the other hand, love them for how easy they make my mornings. Even half-asleep, it takes me less than 5 minutes to whip up a few wraps, and then he has a nice, hot breakfast and I get to make a cup of coffee and settle in to start my day!


I usually make my hubby 2 wraps each morning, one for breakfast and one for a mid-morning-munchies snack. He loves bacon the best, and if you are really in a rush in the morning, you can make your bacon (or other meats) ahead of time and store in an airtight container, or do like I do and find a pre-cooked one that works. With almost endless veggie/meat/cheese combination possibilities, a super quick and easy prep (or the option to make them ahead of time!!) and major portability points, this little breakfast idea will make your mornings way less painful (and way more delicious!)


Homemade Wake-Up Wraps

1 egg or egg white
1 small flour tortilla
1 slice of cheese (your choice, mozzarella and cheddar are my fave!!)
Your choice of meat (sliced ham, bacon, sausage patties, etc) *optional*
Your choice of veggies (finely diced and cooked into your eggs)*optional*

Prep (If eating the wrap now)

1. Put your tortilla in the toaster over with the slice of cheese on top. Toast until edges are crispy/golden brown and cheese is melted. Remove from toaster oven and place on a plate.

2. While the tortilla is cooking, prepare your meat according to package directions and place on one half of the wrap. 

3. Cook egg whatever style you like, salt and pepper to taste. Add in any diced veggies you may want. 

4. Add cooked egg to the wrap, fold in half and enjoy! 

Prep (If making the wrap ahead of time)

1. On a square piece of foil, place tortilla with one slice of cheese and choice of meat (cook if raw, or use pre-cooked for a faster option!)

2. Cook egg whatever style you like, salt and pepper to taste. Add in any diced veggies you may want. 

3. Add cooked egg to the wrap, fold in half and wrap carefully in foil. 

4. When it is time to eat the wrap, simply open foil, open wrap so that it lies flat and heat in a toaster oven until golden brown/cheese is melted or heat in the microwave until hot all the way through.

Don't be afraid to experiment and try out new options with your wraps! Try them with egg whites for a healthier option, and a variety of diced up veggies, meats and cheeses to try a new wrap every day! :)

Feelin' Stressed? 5 Tips to Help You Get Happy!

Life can get a little stressful sometimes, especially if you run around crazy-busy most days. If your life is anything like mine, some days I feel like I barely get one minute to breathe. Here, some tips that have helped me forget the stress and get to happy, ASAP!



1. Smile. 

Yes, even when it's the last thing you feel like doing. Smiles are contagious, and your smile, even if it's a small one, could improve not only your day, but someone else's too. Take a little break from whatever might be stressing you out, find something that makes you happy and smile away. You'd be surprised how much one little smile can change your day - and your outlook - for the better! 





2. Meditate.

I am new to the whole meditation movement, but can already say it has made a huge difference in my stress level. It can difficult to get used to meditating, especially if you're stressed or your mind is going at a million miles per hour, so I downloaded the Buddhist Meditation app from the Android App Store. It starts off at just 2 minutes of meditating per day and increases as you get used to it, and even sends you reminders each day so you remember to squeeze in that all-important "You" time! 



3. Move Your Buns!

When I'm stressed, the last thing I feel like doing is anything physical, but there is just something stress-reducing about a quick walk with the dogs, a short bike ride down the road or even a chill yoga session. You don't have to work up a major sweat, just take a break from whatever you're doing to get moving for as little as 5-10 minutes, and you'll feel your stress begin to melt away...





4. Get Creative!!!

This is my favorite way to nix stress. Taking a break to draw, write, read, paint, sing, dance - anything that gets your creative juices flowing - can do wonders to clear your mind, put a smile on your face and send your stress running for the hills. Pick up a paintbrush, break out a new book, draw a silly picture or paint your nails with a funky new color or design. You'll be feeling so creatively awesome, you might forget you were stressed in the first place...and have something creative to show for it! 



5. Get Together & Have Some Fun!

Having a no-good, very bad, stress-filled day? Being stressed out all alone is the worst, and chances are you aren't the only one stressing like crazy, so call up your best buds and go have some fun together! Go bowling, grab some drinks, play some games, catch a movie, hit the beach, just go have some FUN!! Your stress will seem like a distant memory once you're in a fun situation with friends, and you can even vent to 'em if you need to - bonus!!!

Bring on the nomfest: Chocolate-Covered Strawberry Muffins made with Yoplait yogurt

Oooohhhhh yes I did. You read that perfectly right. I said chocolate-covered strawberry muffins. And they're super easy and quick to make, too. And, um, if I didn't mention this...they're chock full of fresh strawberries and chocolate pieces. 


Made with fresh, juicy strawberries and semi-sweet morsels, these muffins are delectable and rich, and the Yoplait yogurt keeps them moist and melt-in-your-mouth amazing. I happened to have Yoplait Thick & Creamy Vanilla Yogurt on hand, which gave the muffin batter and nice, slightly sweet flavor, but you can feel free to be creative and use whatever delicious flavor you love.

Chocolate-Covered Strawberry Muffins 
made with Yoplait Yogurt

Ingredients:

2 cups of flour
1/2 cup sugar
1 1/2 tsp baking soda
2 eggs
1 cup yogurt
1/4 cup butter - room temperature
1 tsp vanilla
1 cup fresh chopped strawberries
1/2 cup semi-sweet morsels

Instructions:

1. Preheat oven to 375 degrees and line muffin tin with foil baking cups. *Rowdy Tip: Quickly spray the bottom of each foil cup with non-stick spray to make them easier to remove after baking.*

2. Sift together flour, sugar and baking soda. Set aside.

3. In separate bowl, combine eggs, yogurt, vanilla and butter (melt butter in microwave for 10-15 seconds to make mixing easier!)

4. Toss chopped strawberries and semi-sweet morsels in the flour mixture, then add the egg mixture all at once. Stir gently until combined. Do not overstir. 

5. Spoon mixture into muffin cups and bake for 20-25 minutes, or until tops of muffins are golden brown. Allow muffins to cool for a few minutes before serving with butter or margarine. 

Store in an airtight container in the fridge for up to a week, or even make individually wrapped extras and freeze for a quick breakfast treat later!

Day Trip on a Dime Special Edition: Honeymoon on a dime!

Your honeymoon should be the most relaxing, amazing time of your life. You survived planning and executing your wedding, you're now blissfully married and done with the wedding stress, and you finally get some alone time with your sexy new spouse. So many people skip the honeymoon, opting to "go later" or not at all because they don't have the finances to be able to go, which is understandable since honeymoons can get real pricey, real fast. My hubby and I were able to plan an all-inclusive, week-long honeymoon to absolutely stunning Ocho Rios, Jamaica for only $2,100 thanks to a lot of diligent researching and some great luck!

When it came time to plan my own honeymoon, I was a nervous wreck planning and ordering a package online, afraid that I might end up planning our most important vacation through a scam sight. I researched and looked through every possible website and source before finally settling on TNT Vacations website, which offered a wide range of all-inclusive vacations to a variety of gorgeous, tropical destinations and had surprisingly affordable prices. As I mentioned, my hubby and I were able to get away for a week for only $2,100, and that included all of our food, booze (including the daily-stocked mini-bar in the room), 2 different excursions, an upgrade to an oceanfront room, and our round-trip airfare from Boston to Jamaica with shuttle to and from the airport. I was shocked at the deal we got, and still expected to either not receive our tickets and stuff in time (or maybe not at all - yikes!), or to arrive in Jamaica to find our resort was terrible. Luckily (and very happily for me) our tickets and everything arrived 2 weeks before our wedding date - as promised - and when we arrived at our resort, it was literally breathtaking.

We had arrived pretty late, so we grabbed some booze, a bucket with ice and two glasses from our room and camped out on the empty, moonlit beach, toasting to the first night of our honeymoon in such a beautiful place. We awoke the next morning to find the most amazing view from our balcony when we opened our curtains...the oceanfront upgrade was definitely worth it!!!

Situated right on the water, the resort sprawled across lush green lawns and opened to a gorgeous, sandy beach. It was open-concept and meticulously decorated with marble floors and walls, fresh flowers everywhere and the smell of the ocean hanging in the air.

Besides the gorgeous resort, all of the staff was amazingly friendly and helpful, the food was delectable and there was no end of activities to do. There were constant activities offered on the resort; such as scuba diving, snorkeling and catamaran sailing, and tons of off-resort excursions you could easily sign up for as well. Hubby and I decided to book the Ocho Rios Highlites and Dunn's River Falls Excursion, where we got to visit the nearby markets, the rain forest and Dunn's River Falls; then we also booked a full-day Chukka Caribbean Adventures ATV Safari, which was my first time on an ATV and SO much fun!!

At the resort, we took advantage of the gorgeous beach, huge pools (with swim-up bars!!!) spa couples massage, and the sunset snorkeling trip, which went amazing since the other party cancelled, so my hubby and I got a private snorkeling trip with a guide!

This vacation ended up being far more affordable for us than we ever imagined, mostly because of the all-inclusive benefits. We had researched cruises and staying on other islands, but found Jamaica to be the most reasonable, especially with the all-inclusive package. With most cruises and many resorts, you end up paying for your drinks and sometimes food, so it can add up super quick. We found that when you're planning a vacation on a budget, finding a deal like this is key to being able to vacation stress-free. 

The week seemed to go by in the blink of an eye, but it was the most amazingly relaxing, carefree, fun-filled week of my life. I was so sad to have to come back to the freezing cold of Maine after a week in tropical paradise and plan to return as soon as we can!

A Perfect Failure
Warning: This excerpt contains mature content and language.

Travis leaned on the thick mattress, his breath coming in hard bursts as his heart beat against the inside of his chest until he thought it would burst. Jayla’s onyx hair was splayed across the sheets, covering her perfectly made-up face and her toned, tanned ass still shuddered against his hips. He withdrew himself from her, his stomach churning for a moment, and turned away to walk into the bathroom, flipping on the water in the large, glass shower and shutting the door behind him.
            “Hey, your money’s on the nightstand. I’ll call you.” Travis called out. She knew the deal. It was time to go. There were no overnights in this arrangement. He heard her mumble something while she stalked around the room gathering her clothes and he stepped into the shower, ignoring her and letting the scalding water wash away the smell of her overpriced perfume and the feeling of her fake nails on his skin. He didn’t relax until he heard the door to the condo slam shut behind her.
             The water washed over his closed eyes and Mikaela’s face danced through his mind, taunting him even from the grave. His heart ached at the sight of her and he suddenly felt ashamed that he had just finished fucking someone else. I’d be fucking her if she were still here, he thought, the guilt still taking his breath away. He’d watched her wilt before his eyes, the cancer eating away at her perfect, beautiful body until there was almost nothing left. He’d gotten 2 months, 60 measly days, as her husband before she had taken her last breath lying in his arms in that disgustingly small hospital room. He hadn’t been able to save her no matter what he did. He had failed her.
            Anger stirred within him and he shut the water off, stepping from the shower and grabbing a thick towel from the shelf, rubbing his skin violently until it stung. She had been his everything since the day he had first met her as a freshman in high school. Her bright blue eyes and soft, golden hair were the complete opposite of his dark, tanned skin, black hair and mischievous green eyes, and he was hooked. She saw right through his bad-boy attitude and made him want to be better. More than that, she saw him, and she loved and accepted all of him. Not even his own family did that. She was so much better than anyone else he had ever known, and he couldn’t even repay the favor by saving her when she needed him. 

            It doesn’t matter now, he thought bitterly. She’s gone. In the wake of her death, he had lost nearly everything. The grief had almost swallowed him whole, and he felt himself reverting back to his bad-boy days. He brought women around to pleasure him, then discarded them like trash. He didn’t need someone to cuddle with, he just needed to get off. No one would replace Mikaela, and he wasn’t interested in wasting his time trying, so he focused all his energy on being a successful businessman instead. He should have been ecstatic with the accomplishments he had made since Mikaela had died last year. His business was booming, his sex life was enviable and he had every little toy and material thing he had every yearned for while he was with Mikaela. But she wasn’t here to share any of his success with. In the large mirror behind him, Travis caught the reflection of the tattoo that spread across his back: vivre senza rimpianti. The thick black letters scrolled across his back and his chest tightened, remembering his honeymoon in Italy with Mikaela. He had proposed getting the tattoos while there and she had eyed him nervously as they stood in the dusty, dark shop, browsing through books, her blue eyes shining with excitement and fear all at once. “I want something meaningful,” her voice echoed in his mind. “There,” she had pointed in the book to the saying across his back, “live without regret. Perfect.” She had smiled up at him, banning the fear from her eyes, and nodded at the tattoo artist, “I’ll get one too. The same saying, here,” she’d said, lifting her shirt and pointing to her lower back. He closed his eyes, remembering making love to her later that night, his eyes never leaving the tiny scrolled letters across her lower back. Everything will be ok, he’d thought in that moment. I’ll make it be ok. What a joke Travis thought as he yanked on his PJ pants, tying them loosely around his hips. Over a year later and he was still trying to convince himself that it would be ok…ever.

New Year, New Blog, New Perspective: 5 Personal, Reachable, Just-For-ME Goals for 2014!

It's a new year!! What a perfect time for a fresh start, a glam-fabulous new look for my blog, a new perspective on life, and a new angle for attacking this year with vigor and passion! But, unlike most years when I begin with a mile-long list of resolutions, I've decided this year really IS going to be different. This year, I've decided that I'm not doing resolutions, but goals instead. In my humble opinion, the word resolution implies that I must resolve to be better because I am not good enough, while the word goal implies that I have the urge to improve who and what I already am. So this year, instead of starting off with a list of things that need to be "fixed", I am starting out with a list of life enhancements, things that I am doing just for ME, to improve who I am as a person, to learn, grow and change, and to make myself the best me I can be, without feeling like it's because I'm not good enough. So take that list of resolutions!

Goal 1: Take Care of Me - Inside and Out

Much like the cliche resolution of dieting and exercising until you're that perfectly generic Barbie-doll size, my first goal is to take better care of myself and my family, inside and out. But, unlike the resolution that drives people down the usual Weight Watchers and Planet Fitness route, I'm more interested in making changes to be healthy and feel good MY way...and I'm certainly not doing it to fit into a specific size or to be able to display my washboard abs at the beach this summer. I can finally admit out loud and without shame: I HATE exercise of any shape or size, and I love my chocolate and cheese...and that's OK!!! So, rather than start the year by depriving myself of all the food and drink I love and forcing myself to work out, I'm making a lifestyle change that works for ME by measuring out healthier portions, making sure I indulge in moderation and finding ways that I enjoy to "exercise" (yes, in my world that means dancing around the house, I-think-I-got-moves-like-Jagger-seizure-style, while cleaning! Don't judge, you know you do it too!). Cheers to all you dieting, exercising mavens out there...I salute your energy and your drive, but I'll be sitting here enjoying my cheddar cheese and chocolate...in moderation of course.

Goal 2: Say What You Wanna Say...
Being Honest with Myself and Others

If there was anything that 2013 taught me, it was that sugar-coating a tough-situation doesn't make it better - for you or anyone else. I am the kind of person who has a hard time saying what I need to, mainly because I don't want to hurt other people's feelings, or because I am afraid to make myself vulnerable to criticism. My silence has never served me well, in fact, it has been a main component in transforming me into a doormat, aka that person that no one feels bad saying anything to, because they never stand up for themselves. This is something I have strived to overcome for many years, but as a notorious people-pleaser it's not an easy fix. It requires saying the difficult things, the honest things. It requires that you be honest with yourself as well as other people which is not simple task, but I am worth it! This phrase, in and of itself, is difficult for me to utter with any kind of seriousness, as I always tend to put others first, but we all need to take the time to remind ourselves that we are worth it! This year, I plan to put twice as much effort into making myself - and my thoughts and feelings - known and heard in a positive and constructive way. Hi, my name is Kelley, and today I feel...GOOD! :)

Goal 3: Look Ma, No Hands...Expanding My Creative Self

Anyone who knows me will instantly agree that I am a very creative person. I can sketch, paint, sculpt, write...you name something creative, I've probably tried it! But 2013 was a slow year when it came to letting my creativity flow. Personal struggles and unforeseen issues sapped my drive to do anything creative, and I let that part of myself go for a while. Rather than shed a tear over my formerly amazing creative self, I decided it's time to put on my big-girl panties, find my paintbrush and pastels and get back to it, so I dug out my art bag, canvases and brushes, chugged some coffee, and it's go time! 5 minutes of drawing or writing and I'm already smiling...who says change has to be painful? Hello creative self...nice to see ya again!

Goal 4: God, Are You There: 
Finding Something to Believe In that I am Passionate About

I have always been raised Christian. I was baptized, had my first communion, went through bible study, volunteered as an alter server, sang in my father's choir, and was married in the church my parents were married in. My religious history is made up of many years of family tradition: visiting the same church as my grandparents and great-grandparents, attending mass every Sunday and forming a Christmas children's choir every year with. But somewhere along the way, I started to have doubts. To wonder what it was about my religion that excited me, that lifted me up, that made me passionate. If I am going to believe in something bigger than myself, I want it to be something that enhances my life, that makes me feel renewed and passionate about my belief, and I have been struggling to find those things through Christianity. In recent years, I have found the religion to be very judgmental: to preach words of love, but not demonstrate them, damning people because of who they love, how they die, what they believe in, etc. If I am going to give an hour of my life to attend mass each week, I don't want to waste it hearing messages of love and acceptance just to walk out the door and look down on the couple down the street because it is two women holding hands. If you are supposed to "turn the other cheek" and love everyone, then why shun people who are gay simply because they love someone of the same sex? It makes them no less of a person, and makes their love no less real than mine. If man is meant to love then why, to be "good enough" to serve God as a priest or nun, must you forever relinquish your right and basic human need to feel a woman or man's touch, or to conceive your own child? It's questions like this that have led me to recently begin researching other religions; religions that focus more on accepting and treating everyone as equals despite their differences, that allow for human error, human needs and the basic rights that everyone enjoys, and religions that focus on building a more peaceful, centered, open-minded individual. My first project this year is to look into Buddhism and to integrate daily meditation to see how it shapes my life and how it makes me feel, and I'm actually excited to see what else the spiritual world has to offer, and how it could enhance my life.

Goal 5: Love More 

This goal is my favorite, and it's really the easiest one to accomplish. Love more. How hard can that be? Love yourself. Love your family, your friends, your pets...all those people who love your cheese-and-chocolate eating, non-exercising, goal-making, creatively focused ass!
