Bring on the nomfest: Chocolate-Covered Strawberry Muffins made with Yoplait yogurt

Oooohhhhh yes I did. You read that perfectly right. I said chocolate-covered strawberry muffins. And they're super easy and quick to make, too. And, um, if I didn't mention this...they're chock full of fresh strawberries and chocolate pieces. 


Made with fresh, juicy strawberries and semi-sweet morsels, these muffins are delectable and rich, and the Yoplait yogurt keeps them moist and melt-in-your-mouth amazing. I happened to have Yoplait Thick & Creamy Vanilla Yogurt on hand, which gave the muffin batter and nice, slightly sweet flavor, but you can feel free to be creative and use whatever delicious flavor you love.

Chocolate-Covered Strawberry Muffins 
made with Yoplait Yogurt

Ingredients:

2 cups of flour
1/2 cup sugar
1 1/2 tsp baking soda
2 eggs
1 cup yogurt
1/4 cup butter - room temperature
1 tsp vanilla
1 cup fresh chopped strawberries
1/2 cup semi-sweet morsels

Instructions:

1. Preheat oven to 375 degrees and line muffin tin with foil baking cups. *Rowdy Tip: Quickly spray the bottom of each foil cup with non-stick spray to make them easier to remove after baking.*

2. Sift together flour, sugar and baking soda. Set aside.

3. In separate bowl, combine eggs, yogurt, vanilla and butter (melt butter in microwave for 10-15 seconds to make mixing easier!)

4. Toss chopped strawberries and semi-sweet morsels in the flour mixture, then add the egg mixture all at once. Stir gently until combined. Do not overstir. 

5. Spoon mixture into muffin cups and bake for 20-25 minutes, or until tops of muffins are golden brown. Allow muffins to cool for a few minutes before serving with butter or margarine. 

Store in an airtight container in the fridge for up to a week, or even make individually wrapped extras and freeze for a quick breakfast treat later!
